A light, healthy, and delicious tilapia dinner

Here’s an amazing fish recipe that we recently tested out. It’s light, healthy and delicious! And since we are getting married in less than one month we’re looking for all the healthy, light meals possible.

Ingredients
1 tilapia fillets
1 tbsp olive oil
1 tbsp anchovy paste
2 tbsp fresh squeezed lemon
1 cup parsely
3 cloves garlic

Instructions
Preheat the oven to 350°. Place the fish in a baking dish. In a bowl, mix the olive oil, garlic, lemon juice, anchovy paste and parsley, and pour over the fish to coat it.

Cover and marinate in the refrigerator for 20 minutes. Season with salt and pepper, and bake in the oven for 10 to 15 minutes. In the last three minutes of cooking feel free to add some spinach or asparagus to your baking dish for your vegetables.

Now, sit down and enjoy! I really, really, really wanted a glass of wine with this but since I was going to work out later in the evening I couldn’t. But…if you have a free evening to relax this would be even more divine with a glass of Pinot Grigio. Ah bliss!

I’m a pretty relaxed girl, and I’m not worried about having a super planned wedding. But…today is the day that our wedding is one month away!

Oh my god! I’m totally unprepared! The only wedding planning we’ve done is selecting the resort, and sending out invitations…and also thinking about all the tricks and pranks we’re going to play on our friends – if that even counts as wedding planning.

We can’t find our sheet that lists all the things we have to do, but I know that we haven’t done any of them!

Eeeks! How do you plan a wedding in one month???

For all the budget babes out there a few simple tricks to help you live like a diva on a dime. You don’t have to become a shut-in, eat budget food only, or stop seeing your friends. You just have to make a few simple changes that let you keep more money in your pocket while also socializing, having fun and enjoying the good life.

Here are a few simple things you can do to live like a queen when you have a tight budget:

Go Out Later. If your friends are going out for a night on the town at 7 you can meet them at 9 instead. You’ll have saved two hours of cocktails which could easily save you $50…plus you’ll feel better the next day with a few fewer glasses of bubbly in your system.

Meet Your Friends For Desert Instead of Dinner. When your friends are going to a fancy dinner at that super chic new restaurant and you really want to see it you don’t have to miss out altogether. Tell your friends that you aren’t able to meet them for dinner (you don’t need to say you can’t afford it if you don’t want) but you’d love to meet them for desert.

Cook Gifts For People. Is that $25 pricetag for thank you flowers to your friend that did you a favour a bit tough to swallow? Make them some super cute cupcakes or their favourite cookies! You will save a bundle, and you get to do some creative expression with your cupcake decorating.

Double Check Your Receipts. This may sound a little stingy, but do you think the huge corporation that you buy your groceries at deserves the $5.00 they overcharged you more than you do? If you check your bills every time you’ll be amazed how much extra you are paying – so get that money back and put it to better use!

Do Your Research. Before you buy something that costs more than $100 check online to see if you can buy it at a factory outlet or a website for less. Why pay more when you get the same quality goods that you do in the store?

Find The Best Time To Make A Purchase. Lots of companies have regular sales, or days of the week that things go on sale. If you are thinking of taking a trip you may be able to save money if you buy it online after midnight in the middle of the week. Lots of other industries have similar best times to buy, so ask when the lowest prices become available and save yourself a bundle!

A fresh take on an everyday salad

We discovered this South Beach Salad when we were in the Florida Keys. It’s so delicious and easy to make!

Ingredients:
1 (6 ounce) can water-packed tuna or fresh grilled chicken
1/4 cup light yoghurt
2 tbsp curry powder
handful of cashews
1/3 green pepper
1/3 cup chopped cucumber
1/3 cup chopped tomato
1/3 cup chopped avocado
1/3 cup chopped celery
2 cups freshly washed lettuce

Dressing:
4 teaspoons extra virgin olive oil
2 tablespoons fresh lime juice
2 cloves garlic, finely chopped
1/2 teaspoon black pepper

Directions:
Mix the tuna or chicken with the yoghurt, curry powder and cashews. Place lettuce on plate, put chicken or tuna in the centre, and then place the other vegetables around the plate.
For the dressing mix the olive oil, limejuice, garlic, and pepper. Drizzle over the salad.

Mix it Up!
Feel free to use different vegetables and different types of lettuce. For a change you can put spices or sauces on your chicken or tuna. I used light yogurt and curry spices to make this chicken taste extra delicious, but feel free to expirement, as long as you choose low sugar and low fat options to keep it healthy.
